Arugula Astro .  Mildly spicy, early, and vigorous; arugula is a garden must-have. Arugula germinates quickly, and is very tolerant to cold temperatures. It is a great addition to salads, sandwiches, and pizza. Direct seed in spring, and again in late summer for fall harvest. Arugula prefers growing in cooler weather. Days to maturity: 35 (250 seeds)

Jack Ice Lettuce
Dark and delicious crispy leaf lettuce. Great for salads and burgers. Can be
grown for baby greens or to full head. Bred by Frank Morton. 60 days. (200 seeds)

Jerico Lettuce
This romaine is the most delicious lettuce we grow at Three Forks. Beautiful
head with crisp lettuce. (200 seeds)

Kale Mixed Red.  An exciting and unique mix of several curly, red kale varieties. Beautifully coloured and versatile, this kale mix will feed you all summer and late into the fall. Transplant or direct seed early in spring, when soil can be worked. Space plants 12" apart. Days to maturity: 60 (100 seeds)

Merville de Quatre Saison Lettuce
A beautiful butterhead lettuce that is great for all seasons. Is very cold-tolerant
but also does well in summer. 45 Days (200 seeds)

Shanghai Pac Choi. Can be direct seeded or started ahead. Spacing 6" apart. Keep plants well watered . 45 Days (100 seeds)

Spinach Popeye. A delicious, flavourful savoyed spinach. Popeye is a new, open-pollinated variety bred  Direct seed early in the spring for early-summer harvest, or frost seed in the fall for spring harvest. Days to maturity: 50-60 (250 seeds)

Westlander Kale
Very cold hardy frilled green leaf kale. Compact and great for smaller gardens.

Most come from heritage varieties passed down from generations of farmers, while others have been bred by other small seed farmers developing resilient open-pollinated seeds for various regions.
